Diabetes Education at Atria Senior Living
Mary-Catherine recently developed a four-week diabetes curriculum rooted in the AADE7 Self-Care behaviors. She facilitated classes of 10-15 residents, actively engaging them through discussion-based lessons. Mary-Catherine utilized SMART goals to promote healthy behaviors and checked in on the class participants weekly to assure they were making progress toward their goals.
Evaluation of Nutrition Policies for Pregnant Inmates at Tarrant County Jail & Recommendations to Improve Outcomes
Following her passion for maternal health, Mary-Catherine spearheaded a research project on pregnant inmate policies and prenatal education classes. In addition to evaluating menus, she observed and facilitated weekly prenatal educational classes. Since presenting her findings to over 50 employees, several of Mary-Catherine's recommended policy changes have already taken place.
Grocery Store Tours
Mary-Catherine and her colleagues developed curriculum for grocery stores of 4 major chains in Texas, while working with the Blue Zones Project of Fort Worth. After tailoring the curriculum to each store's products and customers, they provided grocery store tours to community members, therefore teaching them how to work within a budget and create delicious meals.
